Frequent Questions & Answers

1. Can I order cookies for this Christmas? So sorry, I am not taking in any orders for this Christmas.

2. May I know why? It is because I will be away and only be back in Singapore 1 week or more before Christmas.

3. How about Chinese New Year goodies? Yes, I am taking in orders for CNY goodies.

4. What are the goodies? Spicy Shrimp Rolls, Bee Hive Biscuits aka Kuih Goyang, Sinful Choco Cookies.

5. Which are the MUST TRY goodies? My back-by-popular-demand Kuih Goyang and Sinful Choco Cookies.

6. By the way, are you increasing the prices for your goodies? Yes, I am. Please email me for prices.

My sincere apology to those who emailed me for my Christmas Cookies ordering, as Ben and I will be away for a good 3 weeks holidays in the State, I do not have the time to bake for Christmas. Besides, we will be holding a mini housewarming party with our closest buddies and paaji during this period, I somehow foresee that I will be extremely busy in this December and would prefer to not make any commitment.

BUT I am taking orders for Chinese New Year Goodies as requested by many "pioneer customers". For those who really miss the Bee Hive Biscuits and Sinful Choco Cookies, place your orders now to avoid disappointment! Again, I thank you all for your supports!

Margaret has been pestering me to bake something these few days, be it a cake or a kuih. Not only that, she also kept insisting that we had promised her to go shopping at Causeway Point together and dine in at PASTAMANIA. Well, we went there at the end despite much reluctance but we didn't go to Pastamania.

M : OK, then we go home and make pasta tonight?
D : Need to buy minced meat and spaghetti. I am not sure if there is any pasta sauce at home. Don't forget we need to buy mushroom as well.
M : Well, then we bake pizza will do.
D : That's a better idea and much easier as I have flour and yeast at home. Go grab some ham, cheese and tomatoes paste.

We headed home and I start searching for some recipe online and found this from small small baker . There are plenty of recipes online but I choose her as I don't have bread flour at home, well, I have no idea why must it be bread flour as the original recipe for pizza dough use only flour or semolina flour. Anyway, so long as my dough does raise and doesn't collapse, I shall thank her for the recipe!

My mood is super good today so I decided to bake something.. Many thanks to LeeLee who shares her recipe online! *Extracted from her blog*

Ingredients:
75 gm plain flour
1 tsp baking powder
75 ml coconut cream/milk
4 egg yolks
5 egg white
100 castor sugar
1.5 tbsp corn oil
1/2 tsp vanilla essence
a pinch of salt
1/2 tsp cream of tartar
1 tsp pandan paste **

Methods:
1. Cream egg yolks, 70 gm of sugar until it is creamy and thick.
2. Add in sifted flour and baking powder, vanilla essence, coconut cream/milk, corn oil, pandan paste into the egg yolk mixture. Use machine to mix it well.
3. In a clean dry bowl, beat eggwhite, remainder 30 gm of sugar, cream of tartar and a pinch of salt until stiff.
4. Mix the eggwhite into the flour mixture and mix it thoroughly using a spatula. Pour into the chiffon pan and bake in a preheated oven at 175C for 45 mins. (My oven doesn't have 175C so I baked it at 170C.)
5. When cake is baked, invert it immediately to cool down for about 10 mins. After 10 mins, use a sharp knife to loosen the side and then the bottom to release the cake. Leave it on a wire rack to cool down further.

Kitchen Aid Artisan or Kenwood Patissier ?

I was lemming on this Kitchen Aid Artisan mixer for quite sometime and now I am in dilemma to get this one or to get the Kenwood Patissier. Reason is simple : PRICE! One is $899 and the latter is only less than $500. Features wise, almost the same and I can choose colour. Was crazy about pink one and now I am getting a white red one instead (wanna paint my future kitchen in white pink). HOW!??

Chinese New Year Goodies - Peanut Cookies

Ingredients:
250g ground peanut powder(you can use coarse peanut powder)
200g plain flour
1/2 tsp baking powder
100g icing sugar
1/4 tsp salt
100g peanut oil

Egg wash:
1 egg yolk lightly beaten with 1 tsp water

Method:

Combine ground peanut powder, plain flour, baking powder, icing sugar and salt in a big mixing bowl till well mixed

Pour in oil slowly and mix till a pliable dough is formed. May need a little more than the stated amount if the dough is too dry.

Shape into small bite-size pieces. We go by feeling.

Place about 2cm apart on lined baking sheet. Apply egg wash.

Bake at 170C for 18-22 minutes or till golden brown so check your cookies regularly.
